Veneto is a region of dramatic differences. It starts high up in the mountains on the Austrian border then rolls down towards the Adriatic Sea, where it finishes with a final flourish in the city of Venice. The cuisine is characterised by the carbohydrates eaten all over the region, polenta, risotto and bigoli.
Trentino’s history explains its cultural dynamism. Residents here frequently speak Italian and German. Both heritage sits side by side on menus – rich stews come with polenta, dumplings and filled pasta, hearty broths, and pasta often comes in the form of spätzle – a fresh egg pasta with medieval German origins.
